COCONUT-ORANGE REFRIGERATOR
COOKIES
 
1 c. shortening
1 1/2 c. sugar
2 tbsp. finely grated orange rind
2 tbsp. finely grated lemon rind
2 eggs
3 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
1 1/2 c. shredded coconut (4 oz. pkg.)

In a mixing bowl cream shortening and sugar until light and fluffy; fold in citrus rinds. Beat in eggs thoroughly; stir in sifted dry ingredients. Lastly, fold in coconut. Shape in roll or two and wrap in waxed paper. Chill. Cut in 1/4 inch slices. Bake on ungreased baking sheet at 400 degrees.
