LEMON REFRIGERATOR COOKIES 
2 3/4 c. sifted flour
1/4 tsp. baking soda
1/4 tsp. salt
1 c. butter
1/2 c. dark sugar, packed
2 eggs
Grated rind of 1 lemon
2 tbsp. lemon juice
1 tsp. vanilla
1/2 c. pecans, finely chopped
1 c. semi-sweet chocolate chips

Sift together flour, baking soda and salt and set aside. Cream butter and brown sugar until smooth. Then add one egg at a time and beat. Add grated lemon rind, juice, vanilla, flour mixture nuts, and chocolate. Form into a roll, chill in wax paper. Cut into 1/8 inch slices. Place on ungreased cookie sheet. Bake at 375 degrees for 8 minutes. Yield about 12 dozen.
