OVEN-FRIED CHICKEN 
8 chicken breasts (halves - wings removed and all skin and visible fat removed)
1 tbsp. corn oil
2 tbsp. lemon juice
2 cloves garlic, minced fine
Salt and pepper to taste
1/2 c. dry bread crumbs

Rinse chicken pieces and pat dry. In a small skillet, heat oil, lemon juice, garlic and salt and pepper. Remove from heat. Scatter crumbs on a fairly large piece of wax paper. Dip each chicken piece into oil-lemon mixture, then into crumbs. Place on lightly greased baking sheet. Bake at 375 degrees for 50 minutes, or until crisp.

Makes 8 servings.
