JIM'S HEALTH SOUP 
1 1/2 lbs. ground chuck
2 onions
5 sm. leeks
1 zucchini
8 carrots
5 stalks celery
2 c. cabbage
1 bulb fresh garlic
2 c. fresh green beans
1 c. brown rice, cooked
2 c. tomatoes, salt free
1 c. tomato juice, salt free
1/4 c. safflower oil
Cayenne powder
Sea salt

Brown and drain ground chuck and set aside. Cook rice and set aside. Cook the green beans and reserve the liquid. Chop up the first 7 group of vegetables and stir fry in a large pot, using the oil until tender crisp; add the rest of ingredients, including liquid from beans. Add more water if desired. Season to taste. Be adventuresome - make up your own combinations of vegetables. Lentils or other beans can be substituted for the rice.
