CHRISTMAS LEMON FRUIT CAKE 
1 pkg. butter
2 c. butter
6 eggs
4 c. plain flour
1 qt. pecans
2 pkgs. mixed fruit (candied)
1 1/2 oz. lemon flavor = juice of two lemons

Cream butter and sugar. Separate eggs and add yolks one at a time. Add lemon flavoring and 3 cups flour. Save 1 cup flour to flour the fruit and pecans. Beat the egg whites until stiff and add nuts and fruit. Bake at 275 degrees for 1 1/2 hours in loaf pans.

This cake has been in our family for years, very good.
