LEMON EXTRACT FRUIT CAKE 
1 lb. butter
2 1/2 c. sugar
3 oz. lemon extract
6 eggs
4 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 lb. pecans, cut up (4 c.)
1/2 lb. cherries
1/2 lb. pineapple
1/4 lb. white raisins

Cream the butter and sugar, add eggs and beat well. Add lemon extract and blend. Sift dry ingredients together, add to cream mixture last. Add fruit and nuts. Blend well by hand. Bake in large tube pan for 2 hours at 300 degrees.
