SPECULAUS (BELGIAN) 
7 tbsp. butter
3/4 cup brown sugar
2 cups flour
1/8 tsp. nutmeg
1/8 tsp. mace
1/8 tsp. cinnamon
1/4 tsp. baking soda
1/8 tsp. salt

Cream 7 tbsp. butter, add 3/4 cup brown sugar, and cream again. Sift 2 cups flour; add 1/8 tsp. nutmeg, 1/8 tsp. mace, 1/8 tsp. cinnamon, 1/4 tsp. baking soda and 1/8 tsp. salt, and sift again.

Combine with creamed mixture and form into ball. Cover and set in cool place overnight. Roll dough to 1/4-inch thickness on lightly floured board. Cut with cookie molds to Santa, star, or desired shapes.

Bake on greased cookie sheet at 350°F. for 10-12 minutes. Ice with pink or white frosting.
