SAVORY PINTO BEANS | |
1/2 c. chopped onion 1 garlic clove, minced 2 c. canned tomatoes (no sugar) 1 tbsp. tomato paste 1/2 tsp. each ground cumin & ground coriander 1/4 tsp. salt 1/8 tsp. ground turmeric 1/2 c. water 2 c. cooked pinto beans Heat skillet sprayed with Pam. Add onion and garlic and saute until softened. Add tomatoes, tomato paste, cumin, coriander, salt and turmeric, stir. Add water and bring to a boil, reduce heat and simmer 10 minutes. Add beans, cover and simmer 5 minutes. Remove cover and simmer 5 minutes longer. Serves 2. Single serving = 1 cup starch, 1 cup vegetable. |
