BONELESS CHICKEN BREASTS 
2 eggs
8-10 halves deboned chicken breasts
2 c. or more Italian bread crumbs
1/4 c. oil (use more, if needed)
1-2 c. grated Mozzarella cheese
1/4 to 1/2 lb. sliced fresh mushrooms
2 c. hot chicken broth (canned) or 2 c. boiling water with 2 chicken bouillon cubes

Pound chicken breasts thin. Beat eggs and marinate chicken in eggs 1 hour. Heat oil in pan. Roll chicken breasts in bread crumbs and saute in hot oil until brown. Place breasts in 9x13 inch baking dish, cover with cheese and mushrooms. Pour chicken broth over chicken breasts. Cover with foil. Bake at 350 degrees for 1 hour. Cook uncovered last 15 minutes.
