MEATLOAF ROLL UP 
2 1/2 lbs. lean ground meat
1 pkg. McCormick meat loaf mix
3 eggs, beaten
8 oz. milk
1 c. bread crumbs
1 tbsp. Polander's chopped garlic
Salt & pepper to taste
8 oz. pkg. Mozzarella cheese
8 slices salami
Parmesan cheese
4 hard boiled eggs

Mix ground meat, meat loaf mix, eggs, milk, bread crumbs, garlic, salt and pepper together. Mix well. Grease a piece of heavy duty aluminum foil, about 15 x 24 inches. Lay out meat mixture on foil in a rectangle shape about 3/4 inch thick. Place Mozzarella cheese on top of meat about 3 inches from all sides. Place salami over the cheese and then sprinkle generously with the Parmesan cheese over salami. At one end, place hard boiled eggs next to each other. Lift foil and roll to the other end. Pinch all open ends together and smooth out meat so there will be no leakage. Flour the top and side soft the loaf. Lift foil all around to make a pan effect. Bake for 1 1/2 hours in a 325 degree oven. Let cool and slice.
