PICKLED BEETS 
24 small beets
1 c. cooking liquid
1 pt. vinegar
1 1/4 c. sugar
2 tbsp. salt
6 whole cloves
1 (3 inch) stick of cinnamon
3 med. onions, sliced

Cook beets, slip skins, slice. Combine cooking liquid (water), vinegar, sugar, and salt. Add spices tied in a cheesecloth bag. Heat to boiling point. Add beets and onions. Simmer while filling jars. Process for 30 minutes.
