DOUBLE-CHEESE POTATO BAKE 
3/4 c. seasoned dry bread crumbs, divided
3 c. mashed potatoes
2 eggs
1/2 c. grated Parmesan cheese
8 oz. Mozzarella cheese, thinly sliced
2 tbsp. butter, softened

Sprinkle 1/4 cup bread crumbs in greased shallow baking dish; set aside. Mix well-mashed potatoes, eggs and Parmesan; spread half of prepared baking dish; top with Mozzarella slices; spread remaining potato mixture over cheese. Mix remaining bread crumbs with butter; sprinkle on top. Bake in preheated 350 degree oven 50 to 60 minutes until potatoes are firm and crumbs browned. Let stand 15 minutes. Makes 4 main dish servings.
