STUFFED BAKED POTATOES WITH
CHEESE
 
8 potatoes
5 tbsp. butter
1/2 c. skim milk
Dash of salt
Dash of pepper
1 c. grated cheese (American, mild Cheddar or Neufchatel)

Preheat oven to 400 degrees. Bake potatoes until done (about 1 hour). While hot, cut tops off and scoop insides into mixing bowl (keep the 8 shells intact). Add butter and skim milk; beat until smooth. Add remaining ingredients and continue beating until mixed thoroughly. Refill potato shells. Bake 20 minutes, then under broiler until delicately browned. Makes 8 servings, 135 calories each. Exchanges per serving: 1 potato = 1 bread, 2 fat, 1/4 lean meat.
