DUTCH COOKIES 
1 c. butter
1 c. sugar
1/2 tsp. cinnamon
1 egg, separated
2 c. flour, sifted
1/2 c. pecans, chopped

Cream butter. Add sugar and cinnamon; beat well. Add egg yolk; beat well. Sift and add flour. Mix well. Press dough evenly unto greased cookie sheets or 12 x 15-inch pan. Brush with slightly beaten egg white. Sprinkle with cinnamon sugar and pecans.

Bake 30-35 minutes at 300°F. Cut into squares while warm.
