OATMEAL PANCAKES 
1 1/2 c. quick oats, uncooked
2 c. milk
1 c. flour
1 tsp. salt
2 tbsp. sugar (optional)
2 1/2 tsp. baking powder
2 eggs, beaten
1/3 c. oil

Pour milk over oats. Let stand 5 minutes. Sift flour together with sugar, baking powder, and salt. Add dry ingredients, eggs, and oil to oat mixture, stirring until combined. Pour 1/4 cup batter for each pancake onto hot, lightly greased griddle.
