SHRIMP WITH SNOW PEAS 
2 to 3 lbs. fresh shrimp

MARINADE:

1 1/2 tsp. dry sherry
1/2 tsp. salt
1/2 tsp. minced fresh ginger root
1 1/2 tsp. cornstarch
1 tsp. sesame oil
1/2 c. vegetable oil
1 garlic clove, crushed
1/4 tsp. salt
1/2 lb. fresh or frozen snow peas

SEASONING SAUCE:

1 tbsp. chicken broth
3 tbsp. water
1/2 tsp. cornstarch
3 tbsp. oyster sauce

Shell and devein shrimp. Combine marinade ingredients in a bowl. Add shrimp and mix well. Let stand 30 minutes. Pat shrimp dry with a paper towel.

Combine seasoning sauce ingredients in a small bowl and mix well. Heat oil in a wok for 30 seconds on high heat. Stir-fry garlic until golden. Add shrimp and stir-fry 30 seconds. Remove from wok and drain.

Add salt and snowpeas in oil in wok. Stir-fry over high heat for 30 seconds. Add seasoning sauce. Stir-fry until sauce thickens slightly.

Add cooked shrimp, and stir-fry to coat shrimp with sauce. Serve hot. Makes 4 servings.
