HEALTH - RIGHT APPLESAUCE - OATMEAL MUFFINS | |
1/3 c. no-cholesterol butter 1/2 c. brown sugar 4 egg whites 1 1/2 c. quick-cooking oats, uncooked & rolled 1 1/4 c. all-purpose flour 1 tsp. each cinnamon, allspice, nutmeg 1/2 tsp. each salt, baking soda, baking powder 1 c. applesauce 1 c. pecans, chopped Preheat oven to 400 degrees. Cream butter and sugar until well blended. Beat in egg whites until smooth. Add remaining ingredients and stir until blended. May add 2 tablespoons water, if needed for moistness. Spoon batter into greased or paper-lined muffin-pan cups. (May use large-size or mini-size muffin pan). Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes before removing from pan. |
