LEMON COCONUT PIE 
1 (8 inch) unbaked pastry shell
3 eggs
1 c. sugar
1/2 c. melted butter
1 1/2 to 2 tbsp. lemon juice
1 tsp. vanilla
1 1/3 c. flaked coconut

Make pastry shell. Beat eggs, add sugar, butter, lemon juice, and vanilla; mixing well. Stir in coconut. Pour into pastry shell. Bake in preheated 350 degree oven for 40 minutes or until knife in center comes out clean.
