LEMON COCONUT PIE 
1 (9 inch) unbaked pie shell
3 eggs
1 1/3 c. sugar
1/3 c. melted butter
4 tbsp. lemon juice
1 tsp. vanilla
1 1/3 c. flaked coconut

CRUST:

2 c. flour
2 tbsp. sugar
3/4 tsp. salt
1/2 c. oil
4 tbsp. ice water
1/2 tsp. butter flavoring

Pie: Beat eggs. Add sugar, butter, lemon juice and vanilla. Mix well. Stir in coconut. Pour into shell. Bake at 350 degrees for 40 minutes or until it passes the "clean knife" test.

Pie crust: Mix dry ingredients. Mix oil, water and flavoring and add at once to dry ingredients. Form dough and roll out onto heavily floured board. Makes 2 pie shells.
