COCONUT OR LEMON PIE 
1/2 c. cornstarch
1 c. sugar
3 egg yolks
1 egg white
3 c. milk
1 tsp. vanilla

Use double boiler. Scald milk. Mix cornstarch, sugar, egg yolks and egg white; blend until thick. Add vanilla. Add grated lemon peel from 2 lemons and juice or coconut. Prebake pie shell. Beat egg whites and cream of tartar for meringue. Bake until brown.
