CHERRY CHEESE BROWNIES 
1 (21.5 oz.) pkg. brownie mix
2 tsp. vanilla
1/2 tsp. lemon extract (optional)
1 egg
1 (14 oz.) can sweetened condensed milk
1 (8 oz.) pkg. cream cheese, softened
1 (21 oz.) can cherry pie filling

Heat oven to 350 degrees. Prepare brownie mix as directed on package, except bake for 20 minutes. Beat vanilla, egg, milk, and cream cheese in large bowl until smooth. Pour slowly over baked brownie layer. Bake until topping is set, 25 minutes. Cool 2 hours; spread with pie filling. Cut into 1 1/2 inch or 2 inch squares. Store in refrigerator. Makes 24 large or 48 small brownies.

Variation: I cut in to 1 1/2 squares. Put into cupcake paper, then spoon pie filling on top of brownies. Works great for bake sales.
