EASY APPLE PIE 
6 to 8 tart apples, pared, cored & thinly sliced (6 c.)
1 cup sugar
2 tbsp. all-purpose flour
1 tsp. ground cinnamon
salt
1/8 tsp. ground nutmeg (optional)
Pastry for 2 crust 9-inch or 10-inch pie
2 tbsp. butter
1 tbsp. lemon (optional - only if apples lack tartness)

Combine sugar, flour, spices and a generous pinch of salt. Mix with apples. Line a 9-inch pie plate with pastry. Fill with apple mixture; dot with butter.

Adjust top crust, cutting slits to allow steam to escape; seal. Sprinkle with sugar (and lemon juice if using).

Bake at 400°F for 50 minutes, or until done. If browning too quickly, reduce heat to 350°F to finish baking.
