QUICHE 
Pastry - reg. pie crust, partly baked
1/2 lb. bacon
1/4 lb. grated Swiss or American cheese
3 eggs
2 c. milk or light cream
1 tsp. salt
1/16 tsp. pepper
1/16 tsp. cayenne
2 lg. onions, sauteed in butter

Fry bacon until crisp. Break in pieces and add grated cheese and onion on partly baked crust. Beat eggs slightly with rotary beater. Add milk or cream and seasonings. Blend. Pour over bacon, cheese and onion. You can also add shrimp, crab, mushrooms or whatever you desire and bake at 400 degrees for 35 to 45 minutes. Do not overbake. Remove while center still appears soft.
