CONNIE'S MINI CHEESE CHEESECAKES | |
24 cupcake liners 24 vanilla wafers 2 pkgs. (8 oz.) cream cheese, softened 3/4 c. sugar 2 eggs 1 tbsp. lemon juice 1 tsp. vanilla 1 can (20 oz.) sweet cherry pie filling Line cupcake pans with the liners. Place a vanilla wafer in each liner. In a small bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Fill the liners 2/3 full with cheese mixture. Bake in preheated 375 degree oven for 15 to 20 minutes or until set. Top each with a spoonful of filling. Chill for several hours or overnight. Serves 24. |
