EASY MINI CHEESECAKES 
3 (8 oz.) pkgs. cream cheese
1 c. sour cream
1 c. sugar
3 eggs
1 tbsp. lemon juice
2 tsp. vanilla
1 box vanilla wafers
1 can cherry pie filling

Beat all ingredients, except vanilla wafers and cherry topping, until fluffy. Drop 1 vanilla wafer into paper baking cup which is placed in a cupcake pan. Top wafer with cream cheese filling until 3/4 filled. Repeat process until all filling is used.

Bake at 350°F degrees for 15 minutes. Top with prepared pie filling.

Yield: 96 mini cheesecakes.

This recipe yields a great-tasting mini cheesecake. However, the size of the paper baking cups is not specified. Using standard cupcake sized baking cups the recipe yields 30-36 mini cheesecakes, not 90, and the cooking time is slightly longer. To get the 90 yield specified, a smaller baking cup would be necessary.
