OLD FASHIONED BEEF & VEGETABLE
SOUP
 
3 lb. beef short ribs
1 lg. can whole tomatoes
1 lg. onion, chopped
1 c. chopped celery
2 carrots, peeled & sliced
1 can beef broth
1 pkg. frozen mixed vegetables
1/2 pkg. frozen corn or 1 can corn, drained
1/2 pkg. frozen cut okra
2 lg. potatoes, cut into pieces
1 1/2 c. chopped cabbage

Any extra green beans, lima beans, corn or green peas. I keep a container in freezer and put leftover vegetable in it for soup.

In large pot or large pressure cooker, brown ribs in small amount of oil. Salt and pepper as you like. (If pressuring, pressure for 10 minutes.) Add water and bring to boil and then simmer until meat is tender. Remove from pot and add 1 can beef broth. Bring to boil. Add tomatoes (chop them first) and juice from can. Then add all vegetables and bring to a boil. Cut back, heat to simmer. When meat is cool, cut from bones and chop into chunks and add back and chop into chunks and add back to soup. Simmer until done. Salt and pepper to taste.
