BLUEBERRY BANANA BREAD | |
1/4 c. butter, softened 1 1/4 c. sugar 1 egg, beaten 2 c. sifted flour 1 1/2 tsp. baking powder 1 tsp. salt 1/2 tsp. baking soda 2/3 c. mashed ripe bananas 1 1/4 c. blueberries 1/2 c. chopped walnuts Make one day; serve the next. 1. Start heating oven to 350 degrees. In medium bowl, with spoon, blend butter with sugar, add beaten egg and beat until smooth. 2. Sift together sifted flour, baking powder, salt and baking soda, add to creamed mixture all at once, mixing with spoon just until all flour is moistened. 3. Fold in mashed bananas, blueberries and walnuts. 4. Pour into greased 9"x5"x3" loaf pan. Bake 65 to 70 minutes or until cake tester inserted comes out clean. Cool in pan 10 minutes. Remove from pan and cool on wire rack. Serve sliced next day. Excellent. |
