MEXICAN LASAGNA | |
1 lb. ground beef 1 (17 oz.) can corn, drained 1 (16 oz.) can tomato sauce 1 c. picante sauce 1 tbsp. chili powder 1 1/2 tbsp. cumin 1 (16 oz.) carton low fat cottage cheese 2 eggs, beaten 1/4 c. Parmesan cheese 1 tsp. crushed oregano 1/2 tsp. garlic powder 1 dozen corn tortillas Shredded cheddar cheese and Jack, about 2 c. Brown meat; drain. Add next 5 ingredients. Simmer 5 minutes, stirring frequently. Combine next 5 ingredients. Mix well in separate bowl. Arrange 6 tortillas on bottom and up sides of lightly greased 13 x 9 x 2 inch baking dish, overlapping as necessary. Top with half the meat mixture. Spoon cheese mixture over meat. Arrange remaining tortillas over cheese, over lapping if needed. Sprinkle some of the shredded cheese over tortillas. Top with remaining meat mixture. Bake at 375 degrees for 30 minutes. Remove from oven. Sprinkle with remaining shredded cheese. Let stand for 10 minutes before serving. |
