CARROT CAKE 
2 c. flour
2 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
2 c. finely shredded carrot
1 c. cooking oil
4 eggs

Grease two 9 x 1 1/2 inch round baking pans. Beat all ingredients with electric mixer. Beat on medium for 2 minutes. Bake at 325 degrees for 40 minutes or until done. Top with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese
1/4 c. butter
1 tsp. vanilla
2 c. powdered sugar

Beat until smooth.
