EASY TURKEY POT PIE 
2 c. cooked, cubed turkey (or chicken)
1 (10 1/4 oz.) can cream of celery soup, undiluted
2 (15 oz.) can mixed vegetables, drained (chunk type)
1 1/2 c. chicken or turkey stock
1 stick butter, melted
1 1/2 c. biscuit baking mix
1 1/2 c. milk

May use bouillon cubes and water.

Mix together turkey pieces, soup, mixed vegetables and stock. Set aside. Coat a 13"x9" casserole or cake pan with the melted butter. Pour out excess butter and reserve for later use. Next, pour vegetable-turkey mixture into the buttered casserole dish. Blend together the biscuit baking mix, milk and excess butter. Blend until almost smooth. Pour topping mixture over vegetable and turkey mixture. Bake pie in a 350 degree oven for 1 hour.

This was very good. I used 6 cups of turkey, one and a half cans of soup and added some salt & pepper, along with all the rest of the ingredients.
