ZITA'S POTATO SALAD 
5 lbs. cooked diced potatoes
1/2 c. chopped green onions
1/2 c. chopped celery
1/2 c. chopped fresh crispy fried bacon pieces
1/2 c. sweet pickle relish
6 hard-boiled eggs, chopped
1 1/2 c. mayonnaise
Salt and pepper to taste
2 tbsp. red wine vinegar
2 tsp. olive oil
1 tbsp. prepared mustard
1/3 c. chopped red pimentos

Very carefully blend all ingredients together except potatoes and eggs. Once all ingredients are well blended, pour over potatoes and eggs. Blend well but carefully. Chill for 2 hours and serve.
