BERRY COBBLER | |
1 1/2 c. sifted flour 1 c. sugar 2 tsp. baking powder 3 tbsp. butter, melted 1/2 tsp. salt 1 c. milk mixed with 1/2 tsp. vanilla Preheat oven to 375°F. In a small saucepan, prepare a syrup made with 1 cup sugar and 1 cup water. Bring to a boil and cook for 5 minutes. Remove from heat and cool. Set aside. Prepare batter by mixing ingredients for 30 seconds. Pour this batter into a greased shallow pan. Cover with a thick layer of berries. Pour syrup over top. Bake in 375°F oven for about 45 minutes. Can be made using other fruits, such as peaches or apples. Can use almond extract instead of vanilla - goes especially well with peaches. I have also added a tablespoon (or so) of Amaretto to the syrup. Submitted by: Belle |
