HOLIDAY CAKE 
3/4 c. cooking oil
2 1/2 c. sugar
1 1/2 c. mashed ripe bananas
3 eggs (well beaten)
1 can crushed pineapple (sm.)
1 (8 oz.) jar maraschino cherries
2 1/2 c. flour
1/4 tsp. salt
3/4 tsp. baking soda
1 tsp. vanilla
1 c. chopped pecans

Mix sugar, bananas, eggs and pineapple. Add cherries. Combine with oil. Combine flour, salt and soda, stir into other mixture. Add pecans, vanilla and mix well. Cook 1 hour 45 minutes in 300 degree oven. Use tube pan. MIX BY HAND.
