HOLIDAY FRUIT CAKE | |
1 lb. butter (no sub.) 2 c. sugar 6 eggs 3 c. plain flour 1 tsp. baking powder 1/4 tsp. salt 1 tsp. vanilla 1 tsp. coconut flavor 1 c. flour for dredging 1/2 lb. candied cherries, halved 1/2 lb. candied pineapple 1 lb. chopped pecans Cream butter and sugar. Beat in eggs, one at a time, beating well after each. Sift together 3 cups sifted flour, baking powder and salt. Add gradually to creamed mixture. Add flavorings. Dredge fruit and nuts in 1 cup flour. Stir fruit and nuts into batter. Bake in greased and floured tube pan at 250 degrees for about 3 hours. |
