CUCUMBER RELISH 
1 qt. cucumbers, chopped
1 green pepper
2 onions
1 red pepper

Grind cucumbers and peppers. Cover with salt (3 teaspoons). Let stand overnight. Drain in morning. Cover with vinegar. Put in spice bag 12 whole cloves, 1/2 teaspoon turmeric, 1/2 teaspoon celery seed and 1 teaspoon mustard seed. Add 1 1/2 cups sugar. Simmer for 1 1/2 hours. Fill jars and seal. You may double or tripe to make larger batches.
