MEATBALL SUPREME 
5 slices of bread, toasted
1 c. warm milk
2 beaten eggs
1 1/2 lb. ground beef
Salt & pepper to taste
4 tbsp. parsley
1/4 c. chopped onion
1/2 c. tomato juice
1/3 c. hot water
1/4 c. chopped carrots
1/4 c. celery
1 sm. can of peas

Soften bread in milk, eggs added; mix meat and seasonings. Add remaining ingredients except the tomato juice, water and peas. Combine in balls and fry to brown. Place in baking dish and cover with peas, water and tomato juice. Bake, uncovered at 400 degrees for 35 to 40 minutes.
