PENNE WITH ITALIAN SAUSAGE AND
GREEN BELL PEPPER SAUCE
 
1 onion, chopped
1 tbsp. vegetable oil
2 (3 oz.) uncooked hot or sweet Italian sausage, casings discarded
1 (14 to 16 oz.) can tomatoes, drained and chopped
1 tbsp. tomato paste
1/4 c. dry white wine
1 garlic clove, minced
1/3 c. chopped green pepper
1/2 lb. penne
1/4 c. minced parsley
Freshly grated Parmesan as an accompaniment

Cook onion in oil until softened. Add sausage, cook until no longer pink. Stir in tomatoes, paste, wine, garlic, salt and pepper. Bring to a boil and simmer stirring occasionally for 15 minutes. Stir in bell pepper and parsley and simmer for another 5 minutes.

While sauce is simmering, cook penne in pot of boiling salted water for 10 minutes. Drain the penne, transfer to a bowl. Toss the penne with the sauce and serve it with the Parmesan. Serves 2.

Made it tonight after a bit of surfing for a recipe that sounded good. It turned out awesome! Will definitely make it again. Don't leave out the parsley, it moves the dish from great to awesome!
