MARINATED VEGETABLES 
5 med. cucumbers, sliced thin
2 med. onions, sliced in rings
2 bell peppers, cut in strips
2 tsp. salt
3/4 c. sugar
1 c. vinegar (white)
1 tsp. dill weed
1 tsp. celery seeds

Place vegetables in bowl and sprinkle with salt; cover with water and chill for 3 hours. Drain vegetables but do not rinse. Dissolve sugar and vinegar by bringing to a boil, add dill weed and celery seeds. Cool and pour over drained vegetables. Will keep in the refrigerator for 2 weeks.

You may use any diet sweetener to equal 3/4 cup sugar. Without sugar, only 25 calories per 1/2 cup.
