NO BAKE CHERRY CHEESECAKE 
1 graham cracker crust
1 (8 oz.) pkg. cream cheese, softened
1/3 c. sugar
1 c. light sour cream
2 tsp. vanilla
1 (8 oz.) container frozen whipped topping, thawed
1 can pie filling, cherry or blueberry

Beat cheese until smooth; gradually beat in sugar. Blend in sour cream and vanilla. Fold in whipped topping, blending well. Spoon into crust. Chill until set - at least 4 hours. Top with pie filling. Chill.

Although I read very nice comments about other no bake cheesecakes on cooks.com, I chose this one because I bought some lite sour cream. It was on sale and cheaper than the other brands of sour cream. The filling makes alot so next time I'll use the 2 xtra servings size pie crust. I know I'll make this again because the batter tasted wonderful. Its chilling in the fridge right now. Some time this evening I'm gonna put some cherry pie filling on top. I can't wait and I'll definitely post my results. Oh yeah, I used the chocolate cookie ready-made pie crust.

This No Bake Cherry Cheesecake is awesome, even after 2 days. It tasted better than the first day I made. I'm mot much of a fan of chocolate but I did use a chocolate cookie crust. It has softened up and blends well with the filling and cherries. Oh, and the cherries got even sweeter. Yum! Thanx for this recipe.
