NUTTY ZUCCHINI BREAD | |
3 eggs 2 1/2 c. sugar 3 tsp. vanilla extract 1 c. oil 2 c. zucchini, grated 3 c. flour 1/4 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 3 tbsp. ground cinnamon 1/2 tsp. ground nutmeg 1/2 c. nuts, chopped 1/2 c. grated coconut In large mixing bowl, beat together the eggs, sugar, vanilla and oil. Blend well. Stir in zucchini. Sift together dry ingredients and add to sugar mixture with nuts and coconut. Divide batter between the two greased and floured pans. Bake at 350 degrees 1 hour. Cool on wire racks and invert pans to remove loaves to cool completely. Makes 2 small loaves. |
