BEEF WITH SNOW PEAS | |
1/2 lb. lean boneless beef (salted and peppered) 1 pkg. frozen snow peas 1 can chicken broth 1 tbsp. corn starch Ginger root, sliced fine 1 garlic bud, chopped fine Peanut (or corn) oil Slice beef in very thin slices. Make a lightly thickened sauce with broth and cornstarch. Peel ginger root piece (1/2 inch about) and chop garlic bud fine. Heat oil in wok or iron skillet. Add sliced ginger root and garlic, saute while stirring constantly. Remove from pan and add beef slices, turning until lightly browned. Add garlic and ginger root to thickened sauce. Place snow peas in skillet and keep turning until glossy. Lastly, add sauce, stir until mixed. Serve on rice. |
