4 eggs 1 1/2 c. sugar 2/3 c. flour 1/2 tsp. baking powder 1/4 tsp. salt 2 tbsp. melted butter (cooled) 1 tbsp. vanilla 5 1/3 c. coconut 2 c. chopped pecans Beat eggs until foamy - slowly add sugar and beat until thickened (about 5 minutes). Fold in flour, baking powder and salt. Then fold in butter, vanilla, coconut, and pecans. Drop a teaspoonful of batter on greased and floured baking sheet. Bake at 325 degrees about 15 minutes (delicate brown). 6 dozen. |
