MOCK CHOCOLATE ECLAIR 
1 box graham crackers
2 (3 oz.) pkg. French vanilla instant pudding
3 c. milk
1 (8 oz.) carton Cool Whip
1 tsp. rum flavoring (optional)

FROSTING:

3 tbsp. butter
3 tbsp. cocoa
1 1/3 c. powdered sugar
1 tsp. vanilla
3 tbsp. hot coffee

Line 9 x 13 inch pan with whole graham crackers; cover entire bottom. Combine pudding with milk; mix according to package. Add Cool Whip and rum flavoring. Pour 1/2 mixture over grahams. Cover with another layer of grahams; spread with remaining pudding mixture, topping with a final layer of graham crackers. Spread with frosting. Chill 24 hours.

Shortcut: Can use 1 can prepared fudge frosting, softened in microwave, in place of frosting recipe.

Since microwave ovens vary in power, you may need to adjust your cooking time.
