3 c. flour 1 tsp. baking soda 1/4 tsp. baking powder 1 tsp. salt 1 tbsp. cinnamon 1 c. chopped pecans 3/4 c. vegetable oil 3 eggs, slightly beaten 2 c. sugar 2 c. peeled, grated pears 2 tsp. vanilla extract Combine first six ingredients in large bowl; mix. Make "well" in center. Combine remaining ingredients, pour into well, stir until moist. Bake in 2 greased loaf pans at 325 degrees for 1 hour and 15 minutes or until bread tests done. Cool 10 minutes in pan, then on wire rack. Can be frozen. |
