BEET RELISH 
1 pt. chopped boiled beets
1 c. chopped celery, if desired
1 tbsp. horseradish, if desired
Dash of red pepper
1/8 tsp. white pepper
1/2 tsp. salt
3/4 c. sugar
1/2 c. beet juice
1 pt. chopped cabbage
1 med. chopped onion
3/4 c. vinegar

Mix all ingredients, let come to a good boil, pack in sterilized jars and seal. Process 10 minutes at simmering point, about 180 degrees.
