RUM BAKED BANANAS 
2 firm bananas
Grated rind & juice of 1 lemon
2 tbsp. brown sugar
2 tbsp. butter, melted
2 tbsp. rum

Cut bananas in half lengthwise; place cut side down in a buttered baking dish. Brush bananas with lemon juice; sprinkle with grated lemon rind and brown sugar. Combine butter and rum; drizzle over bananas. Bake at 350 degrees for 15 to 20 minutes. Serve plain or with ice cream. Yield: 2 servings.
