FRESH MUSHROOM CASSEROLE | |
2 sm. onions, chopped 3/4 to 1 lb. mushrooms, chopped 2 tbsp. butter 2 eggs 3/4 c. milk 3/4 c. half & half 3/4 tsp. salt 1/4 tsp. pepper 1/2 c. unseasoned bread crumbs 1/2 to 2/3 c. shredded cheddar cheese Red or green pepper rings In skillet melt butter. Saute onion and mushrooms over medium-high heat 10 minutes or until liquid evaporates. In large bowl beat egg slightly. Mix in milk, half and half, salt, pepper and crumbs. Stir in onion-mushroom mixture. Turn into a greased 1 quart casserole. Sprinkle with cheese. Add pepper rings. Bake at 350 degrees for 45 minutes or until well browned. |
