CHICKEN TACO SALAD 
1/2 med. head lettuce, shredded
2 c. cooked chicken, cubed
1 tomato, seeded and chopped
1/2 c. sliced ripe olives
1/4 c. sliced scallions
8 slices bacon, fried and crumbled
1 c. grated Cheddar cheese
1 c. crushed corn chips (optional)

DRESSING:

1 med. avocado
1 tbsp. fresh lemon juice
1/2 c. sour cream
1/4 c. vegetable oil
1 clove garlic, minced
1/2 tsp. sugar
1/2 tsp. chili powder
1/4 tsp. salt
1/4 tsp. hot pepper sauce

Mix dressing ingredients until smooth. This may be done in a blender. Chill. Layer salad ingredients, beginning with lettuce and ending with cheese, in a 2-quart glass bowl. Spread chilled dressing over top and sprinkle with crushed corn chips, if desired.
