CHICKEN TACO SALAD 
1 tbsp. butter
1/2 c. onions
2 c. cooked chicken, cubed
1/2 c. water
1 pkg. taco seasoning mix
4 c. lettuce
1 c. tomatoes
2/3 c. green pepper
1 1/2 c. (6 oz.) Colby cheese, shredded
1 1/2 to 2 c. corn chips, broken
Sour cream (optional)
Salsa (optional)

Melt butter in large saucepan. Saute onion. Stir in chicken, water and seasoning mix. Simmer uncovered 20 minutes. Meanwhile, combine lettuce, tomatoes, green peppers, in large bowl. Spoon hot chicken over lettuce mixture. Top with cheese and corn chips. Serve immediately with cream cheese and salsa.
