CHICKEN SALAD TACOS 
2 1/2 c. diced cooked chicken (deli baked chicken is perfect)
1 c. pitted ripe olives
1/4 c. chopped green pepper
2 tbsp. chopped pimento
2 tbsp. sweet pickle relish
1 tbsp. finely minced onion
1/2 c. mayonnaise or salad dressing
1/2 tsp. salt
Dash of pepper
6 or 8 taco shells

Quarter olives. Combine all ingredients and mix well. Fill warmed taco shells. Top with shredded lettuce and/or shredded Cheddar cheese, if desired.
